Ladies’ Finger Fried Curry

Ingredients 

300g Ladies’ Fingers
20g Salt
05g Turmeric Powder
01 tsp Sliced Garlic
04 nos Sliced Green Chili
30g Sliced Onion
01 cup Cooking Oil
1/2tsp Curry Powder
01 tsp Chili Powder
1/2tsp Cinnamon Sticks Crushed
1/4tsp Mustard Seeds
03g Pandanus (Rampe)
03g Curry Leaves
10g Sliced Tomato
01 cup 1st Extract Coconut Milk
01 tsp Salt


Method

  1. Slice the ladies’ fingers & marinate with turmeric powder
  2. Fry in oil until get golden brown
  3. Heat the oil in a pan & add mustard seeds, Pandanus (rampe), curry leaves, cinnamon sticks, onion, garlic, and green chili
  4. Then add curry powder, chili powder & turmeric powder
  5. Sauté the ingredients for 03 minutes without getting dark brown color
  6. Add 1st extract coconut milk and cook for 02 minutes
  7. Combined fried ladies’ fingers & cook for 02 minutes
  8. Add sliced tomato & salt to taste

Tips

  • Do not fry ladies’ fingers for a long time. It will absorb the oil & will give an oily taste
  • Before frying the mustard seeds, heat the oil well to pop up the mustard seeds. Otherwise, it will give a bitter taste to the curry
